I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.

There is no possibility to create sub-categories, nor is there a way to limit how many times a customer can book with an employee.

To add them, you would need to alter the code of Amelia, and unfortunately that's not something that can be easily done.
