When wpDataTable is "Enabled Server Side Processing" the excel report only shows the 25 lines configured (per page) .
Also occurs in Donwload Excel Button of wpDataTables.

Table tools' functionalities are based on a 3rd party HTML5 library, and this is expected behavior, as pointed out in our documentation:
For tables with server-side processing, only the visible rows will be exported to any format. If you want the entire table to be exported (or copied to a clipboard), you need to choose the “Show All” feature in the “show … entries” block, and then do the export.
Same applies to Report Builder, since you're using server-side, not all rows are pulled from the database. Server-side processing returns only the data needed for the page, so if you set the number of rows to be 25, only 25 rows will be exported. If you set it to 50, only 50 rows will be in the report.
