There isn't a possibility of removing Employees from Amelia with its current features and setup, unfortunately. You can only hide the employee selection and info on the front-end with adding custom CSS, if you want that we can help out with that. But for your use case - if you want to have more than one appointment at a time you would need to have more employees assigned to the service, or have a maximum capacity of the service to be greater than 1 (in this case you would have group appointments - more customers in one appointment).
