I want my site to be able to separate only the service without the need for employee availability. It would be very good if we could remove the option from the employees, because we do not need it.
An example of what I need is for me to be able to book a service more than once on the same day, even at the same time. The best option would be that we put how many times at the same time that service can be reserved.

There isn't a possibility of removing Employees from Amelia with its current features and setup, unfortunately. You can only hide the employee selection and info on the front-end with adding custom CSS, if you want that we can help out with that. But for your use case - if you want to have more than one appointment at a time you would need to have more employees assigned to the service, or have a maximum capacity of the service to be greater than 1 (in this case you would have group appointments - more customers in one appointment).
