Is it possible to have multiple categories on a scatter chart, each category being represented by a different shape? If so, what is the proper way to set up a table to do this?

I don't quite understand what you mean. Each scatter point can display values for two variables for a set of data, so it cannot be used to create a shape.

Sorry if I'm being unclear. Let's say I have a scatter plot of cars using prices and miles. I would like to have all 2 door cars have one color (or shape) and all 4 door cars have another shape or color.

I don't know if that's possible.
The string column in your table will be used for the X axis; and all other columns should be either integer or float.
So, if I have this table:
The resulting scatter plot would look like this:
So, the points you see there are actually "Price" and "Miles" columns, rendered with their values for corresponding rows. You would need to have two different columns for 2-door cars, and 4-door cars, but I'm not sure how you would populate that table to show what you want to see.
