I am in the process of building a site for a Party Bus service. Do you think your plug-in can accommodate the scheduling needs for this service? We will need to schedule service with a 2 hour minimum as well as collecting deposits and full payments. Also, we would need for the plug-in to be able to schedule time slots without the calendar showing date as unavailable once one booking time is selected. I hope I am explaining this correctly. You can set this up as you explained, it won't be an issue with regards to a schedule.
You can also specify the type of payments as needed (PayPal/Stripe/WooCommerce) and disable payments on-site.
AS to your last point, you can arrange this via Events feature in Amelia:
