Hello,
I have a Manually created Table and I have a Date column with the Placeholder of %CURRENT_DATE% . The popup tool tells me "This placeholder will be replaced with the current dat" but when I enter the placeholder and make an entry, the column gives me a date picker instead of just showing today's date. How to I set the column to show today's date w/o the date picker?

Unfortunately, you cannot use the placeholder as a predefined value while using the "Date" as the editor input type.
You need to change the editor input type to string (one-line edit), and after that it will work:
Please note, though, that your users would be able to change this.
