Hi,
in the catalog view I would like that, after choosing the service, the calendar is immediately shown as if there was only one employee.
The reason is that the costumer can't choose the employee (I have already hide all employees views with css) and all consultations are 1 to 1, so the first screen (see attached image) only has the button "continue" on it and this passage is not necessary.
Is there a way to do that?

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
The only way you can see the calendar right away would be if there was only one employee. Or, if you add [ameliacatalog employee=2] - so specific shortcode per employee.
Anything other than that is not possible, unfortunately.
