I am evaluating your plugin to book visitor slots for a museum.
1. Is there a German translation or is the plugin translatable via WPML? 2. We don’t need an employee selection, actually it would be great to completely hide employee. 3. We’d need a GDPR-compliant solution. At least an option to confirm.
We do have German translation, you just need to choose German language in the main WordPress settings.
You can use WPML but it would only translate static strings. Dynamic strings, unfortunately, cannot be translated with WMPL or any other multi-lingual plugin.
One of our customers used PolyLang in combination with "Theme and plugin translation for Polylang (TTfP)" plugin and said they were able to translate dynamic strings as well.

You can use CSS to hide the employee from the front end but it is not possible to configure the booking without employee.
You can create for example some fake employee and hide it from the customer.
