How can I in Amelia offer a package of 6 recurring appointments of 1 hour each?
I of course want to leave to the customer the ability to choose date and time, per availability, but how can I force this package to be 6 appointments ?

With version 3.0 we've included the Packages feature in Pro and Developer licenses.
You can now create a package for a single service, or multiple services - your choice, where you can define how many appointments can be made for each service individually.

How can I display services, with their thumbnails, without the packages ?
[ameliacatalog category=1] shows both services and packages
[ameliabooking category=1] shows a boring form without pictures
[ameliacatalog service=1,2,3] only shows service 1, not 2 and 3

Adding multiple services in a shortcode (your last example) doesn't work.
You can define whether you're going to show only services or only packages with these shortcodes:
[ameliabooking show=services] - shows only services in step-by-step view
[ameliabooking show=packages] - shows only packages in step-by-step view
[ameliacatalog show=services] - shows only services in the catalog view
[ameliacatalog show=packages] - shows only packages in the catalog view
