I was looking around on your FAQ, but wasn't able to locate the solution to my problem. My client's rates increase or decrease depending on the day that their potential clients choose to schedule on. For example, $100/hour on Friday, $120/hour on Saturday, etc. Is there anyway for me to set that up in the plugin, and not have to set it as a service, so that when someone chooses Saturday, the new rates will automatically be applied?
I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
You would need to set up different employees or different services.
If you go for different employees, you could use Employee 1 for all days where service price is $100, and Employee 2 for all days where service price is $120. You can change the price per employee in Assigned Services tab of your employee's profile, and configure their working hours separately.

Whenever I duplicate or try to create an employee for the weekend work days w/ the changed rates, the plugin won't let me save the new employee unless the email is different from before. Is there anyway to fix this? I want all of this employees emails to go to his singular email. I don't want to have to make 3 different emails for him. Is there anyway I can change that?
This limitation is coming from the database, and users cannot have the same email assigned to more than one user.
You can add dummy email addresses, then go to your database table wp_amelia_users, and remove the index on the email column:
When you do that, you will be able to change your employees' email addresses in the database. You would still not be able to save the same email for multiple employees from within the plugin, but you'll be able to do it from the database.
