For some reason, I can't create any categories/services. It tells me there's an error.
Also, I looked through the entire plugin and couldn't find any shortcode, html and/or Elementor widget to implent Amelia into my pages... It shouldn't be this complicated to accomplish the most essential task.
If you can't add any services or categories, you may have an issue with your database, but I can't say for sure without taking a look at the database and your website.
You can see the list of Amelia's shortcodes on our FAQ page, and you can use them with any page builder.
Please provide me database access (phpMyAdmin or cPanel) credentials, and a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party.
You can write credentials here just check Private Reply so nobody can see them except us.

I don't usually have issues with plugins, so if you can't fix this by the end of the day, I'll be requesting a refund.

Even if I see what the issue is when I log in, I doubt I'll be able to fix it without database access. You could have an administrator's ID linked to a customer; or maybe some database tables weren't created.
I can't say that without taking a look at the database, unfortunately. If that's a deal breaker for you, I'm sorry to hear that, but I can't resolve an issue on your website without accessing it.
