Is there a way to itemise the invoice generated by the WooCommerce integration?
ie. if a customer books several dates, is there a way to split each date into it's own line and price?

Unfortunately, no. Like I mentioned in the other ticket, Amelia doesn't have any invoicing, so that's done through WooCommerce. Amelia sends the info to WooCommerce per appointment, and if there are several dates picked, they will be in the same invoice.

I don't want each date on a separate invoice, just as a separate item for each time. So if I purchase 5 time slots, I want to show each of those 5 slots and how much each cost.

Are you referring to recurring appointments or events? To be able to book 5 time slots you need to use one of these two.
The invoice is customizable as I said in the previous ticket, but we will work on it.
