The data type in the first 3 fields is Integer, so wpdatatables calculates the total. But the marked fields seem to be formula columns. If that is correct, then, as of now wpdatatables does not calculate the total of a formula column.
Thanks Srinath for answering for previous question.
I can say that Srinath is right, but I can add one more thing. Based on your image for requested columns you already set Min and Max values which means it is not formula (Formula column don't have those options) that you are using float column where those calculation functions are available. So you need just to turn on Calculate total on Data tab in column settings.
More about Calculation function you can read here.
"Is it possible to assign to these fields data e.g. via a shortcode or a specific wpdatatables function?"
Unfortunately that is not possible with built in features of plugin. You can find shortcode below each calculated function which you can use in another table or outside the table, but not in the area that you point out.
My table is shown in the attachment. I want to show the total percentage in the marked fields - 57,11 - 19,44 ...
Is this possible in wpdatatables?

Thanks, another question:
