The booking shortcode is not working the way I would expect. Here is the shortcode associated with the Free Session page: [ameliabooking service=2 employee=1]. I am a one-employee shop, (employee=1) and service 2 is a free coaching session. The problems appear on the calendar panel and the profile panel.
Here is an image of the customize panel: My vision is limited and I need to see things in high contrast: hence my mangling of the Colors and Fonts.
Here is the Calendar panel. There are two problems here:
1) Some of the fonts are greyed out. What causes this?
2) The rest of the fonts are too light for my eyes. How do I make them darker?
Here is the profile panel. The name fields are all disabled. Why is that and how do I fix it?
There aren't options for changing this in Amelia, unfortunately. The only options for customization are the ones you see on the Amelia -> Customize page. But it can probably achieved with custom CSS. You can let me know exactly what do you want to change (provide screenshots) and I can help out with the CSS, if needed.

I am not sure if I understood on what exactly are you referring to here. If you are talking about the booking form - the name, email, phone fields - they are filled in and greyed out if someone who is logged in to WP or the Customer panel is booking. So, in this case, if a user who is logged in to WP or the customer panel i sbooking in Amelia their information will be populated in the form.
You need to change the Text color on Background to white, since this is the text color that will be applied to the black background. The continue/confirm button should be in the Primary color, but when you change the above the text should be white. The calendar background is white because you have chosen white for the Primary gradient.
The fields are filled in because you are logged in to WordPress , like I mentioned before the fields will be populated with users' info if they are logged in to WP or Customer panel.
