To remove "All" from "Default Rows Per Page" in the Display tab above the table, go ../wp-content/plugins/wpdatatables/templates/admin/table-settings/table_settings_block.inc.php and remove line 342:

<option value="-1"><?php _e('All', 'wpdatatables'); ?></option>

Then, go to ../wp-content/plugins/wpdatatables/source/class.wpdatatable.php and modify line 3207 from this:

$obj->dataTableParams->aLengthMenu = json_decode('[[1,5,10,25,50,100,-1],[1,5,10,25,50,100,"' . __('All', 'wpdatatables') . '"]]');

To this:

$obj->dataTableParams->aLengthMenu = json_decode('[[1,5,10,25,50,100],[1,5,10,25,50,100]]');

And it will remove "All" from "Show XX entries" above the table.
