Just wondering how/where I can edit Event Tags or delete them.

You can edit or delete Event Tags in the database, only. There isn't a possibility to edit and delete them in the back-end of Amelia, unfortunately. You need to access your database, and find and open the wp_amelia_events_tags table there (it can have another prefix rather than wp_ depending on your database) and edit/delete tags there.
