We need to have 8 spaces for booking and if someone books 4 spaces, then we will be able to still display 4 left. We have done this will appointments because we need to be able to charge for some spaces and not others (children) but they still need to be added into the total coming off the spots left. Can we do this via appointments or events? What is the best way and how?

No matter what you choose whether Events or Services/appointments in Amelia , the price will be multiplied by the number of people in the booking - there is an option to choose for Services if you want the price to be multiplied or not, but there isn't a possibility of excluding children. Unfortunately, it isn't possible to have different prices for the same service - free for children, some price for adults. You can try using Coupons to achieve what you want maybe - create coupons on 100%/ticket price and give them out to customers, so they can use them if they are booking for children so they won't pay for them as well.
