You can only hide the employee selection field from your front-end form, so your customers are assigned to an employee randomly.

When that happens, Amelia will email the employee assigned to the appointment. If you meant to ask something else, please explain in a bit more detail.

You can't do that from within the settings, but you can hide it with this CSS:
