I would like to assign specific work availability for each service. Example Student Office Hours (18:00-20:00 MTW), Consulting (9:00-13:00), special meeting (15:00-20:00 M).
There is a general setting and working hours per employee, but no way to define the working hours per service.
Currently I have a workaround - defined different "employees" one for each role (consultant), teacher, etc. But that is still not a good option. Plus each employee must have an individual email.
So, is there a way to assign a specific work availability for a service ?

Unfortunately, services don't have working hours, and they depend on employees.
So, what you did is actually the only way to do it. You need to have 3 employees for each of these services, or one employee that will work on Student Office Hours (18:00-20:00 MTW) and Consulting (9:00-13:00), or on Consulting (9:00-13:00) and special meeting (15:00-20:00 M). Since Student Office Hours and special meeting overlap, you wouldn't be able to assign one employee to both.
How many employees do you actually have? If it's just one employee, you can create a couple of fake employees (with the same name), but connect them all to the same Google Calendar. In that case, when one employee is booked, the other two employees cannot be booked at the same time.
