Hi! I think there is some kind of problem when it comes to displaying the date in the reservation form when I have my site date set to "j de F de Y".
In this case, instead of displaying "10 de agosto de 2020", it shows "20 DDe agosto DDe 20200" and the popup to reschedule an appointment is a real mess.
Unfortunately, the issue you're having with the date format will be present until you use one of WordPress' default formats.
So, you would need to use one of these:
I will forward the issue with the custom format to our development team, and hopefully they'll be able to add it in one of the future versions of the plugin.
Hello! In Spain this is our predefined date format, I am not using any custom one, but the one that comes in WordPress already preset. This same problem occurred in all countries that use the format other than English.

Hello again Juanma
The issue here is (as you can see from your own screenshot) this: \d\e
That's a custom word, but "d" and "e" are also date formats, so that's why you see it distorted.
Our development team already created a task for fixing this bug earlier today, so the issue will be fixed in one of our next updates
Kind Regards,
