I want to add a short description to each service, I was wondering if I could do this with Advanced Custom Fields or if there is some other alternative

Each service has a description field, but it can only be displayed in the Catalog view (if you use [ameliacatalog] shortcode).
If you don't want to use the Catalog view, I suppose the best way would be to use "Text Content" custom field.

What I want todo is to change the catalog view. I want to add a short description, additional to the long description every service has. Or just to display the long description in the catalog view. Is any of this possible? Or can you provide the path to where the catalog view structure is specified?

Yes, the description of services is only possible with the Catalog view, so I'm not sure what issues you're having.
The description doesn't exist for categories, only for services. So you first see the list of categories (if you have more than 1), then services, and when you access each service you can see the description.
