Unfortunately, something like this is not possible. The data from custom fields is being saved as an array in wp_amelia_customer_bookings table, and its length can't be defined through the database.
You would need to do this as a custom solution with JavaScript, but it's not something included in the provided support for the plugin, so I can't help you with that.
