How would I go about setting a service duration that is 5 working days?
I offer a service that is a week long - but the maximum booking duration seems to be 24 hours.

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
The plugin doesn't have any options to book an appointment or an event that goes into another day. You can create an event that lasts 5 days, and set the duration to be 24 hours, so your employee is assigned only to that event, and when someone books it, they will be assigned to the event for the 5 days the event is to take place.
