I am just testing out the employee front end panel. There is no option for the employee to add a new customer when creating an appointment.
I've Clicked 'New Appointment' and under customer(s) it only lets me search for existing customers, not create a new one.

Unfortunately, that is something that cannot be done from the employee's panel. You can only play around with the Amelia Employee user role using a role management plugin, like User Role Editor, but even if you allow your employees to read, write and delete customers, they'd only be able to do that while logged into your Dashboard, not from the employee panel.
As for configuring their days off, have you enabled this in Amelia settings/Roles settings/Employee?

Also on the Front end employee panel, I can't see how to book days off.
