I would like to pre-set the service offered to customers depending on the page they are on. For instance, to book a valuation appointment, I would like to preset the service type to Valuation; if they are collecting an item, the service should be Collection.
Can I either preset the service, or better still just offer one service on a particular form?

You can offer one service per a booking form by using the shortcodes with services' IDs. For example,
[ameliabooking service=1] if you want to show the booking form for the service with ID 1
