Is it possible to change the appointment booking time for one day as a one off? A yoga class is bookable 7.30-8.30pm every Thursday however on one Thursday I want to change the time to 6-7pm as a one off. If I add it as a special day it adds It so you can book 6-7pm and 7.30-8.30pm. How would we disable the 7.30-8.30pm just for that day and not every Thursday??

You would likely still need to use a Special Day to make this work. You'd have to set your hours to only those you want (like the 18:00–19:00 timeframe; see screenshots). Then, depending on your service duration (should be set to one hour), it should only show the one hour slot for 6 – 7 PM. My screenshot shows a couple, as my service duration is only 10 mins.
If it shows the 7:30 slot, too, then your service duration for that particular yoga class is set as 30 mins.

When you want to change the usual employees' work hours set you can use the Special days feature, like Jonathan said. Thank you for helping out, Jonathan!
So, when you create a Special day for one employee, the work hours and assigned services you setup in that Special days will be the availability for that employee for the dates you choose there. The Special days override the usual employees' work hours.
