How can we add sales tax on top of all services sold at the check-out?

There isn't a possibility for adding taxes in Amelia with its current built-in features, unfortunately. We have this feature request in our list and I will add your vote to it, but for now we can't say if and when it will be implemented.
There is a possibility of adding taxes in WooCommerce, and using the WooCommerce integration (payment method) in Amelia. You can read more about it here.
