I need custom fields that will be active for all events, not just the existing ones. If I add a new event every week, re-enabling all custom fields for it sounds like a major pain. Is there a solution for this? Thank you!

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
At the moment, you need to manually assign custom fields to events, and there's no automated process. Our developers will be working on changing that in the future.
