I have a barber shop website that I'd like to launch in a few days
I have 3 or 4 barbers at any one time, can I just have 3 x 10:00 appointments available and not give the option to let the customer choose who they book?
I tried adding Barber1, Barber2 Barber3 but that then shows 3 of each product or service in the menu
Ideally there would be 3 barbers working in one salon and we can book 3 appointments at any of the available times

Is there a way to have the menu show just one of each service on the menu and there be 3 available slots to book?
You can use [ameliacatalog] shortcode, which will display all your categories in cards, then when people select a category they will be able to choose the service (also in cards).
If you have all services under one category, you can skip the category selection step with the shortcode [ameliacatalog category=1] (where "1" is the category's ID).

[ameliasearch] is not as flexible as other shortcodes.
You could create separate categories for each employee, and then use [ameliabooking category=1] or [ameliacatalog category=1] to display only certain category on one page.
If your client agrees with this setup, maybe it'd be best.
You could create all your services to have max capacity set to "2", so each time slot can be reserved by two customers. If you wish to do this, you should either hide "Bringing anyone with you", or if that's alright leave it so people can actually bring someone with them to the barbers.
To do this, you should also configure Appointment settings like this:
That would achieve 1) - one employee in the system, but physically 2 barbers working on site.
2) is also achieved with this.
3) No. Locations are defined per employee, but I just remembered this as a prerequisite, and it disregards everything above...
I can't find a solution for your use case (2 locations, 1 employee). It would have to be done the way I described in my previous comment.
As for staff dashboard, that's not something I can recommend, as I've never checked anything other than built-in options. We're currently working on Front-end Employee panel, and that should be cool. I can't say when it will be included, though.

If you have 3 barbers working on the same service, each appointment will be handled 3 times (by each barber separately).
This is the way the plugin works normally, and if you need to hide the employee drop-down, we can help you do that with some custom CSS.

I'll explain what the client wants to achieve, maybe I can customise [ameliasearch] ?
1) Only ONE barber or employee on the system. (2 barbers actually working)
2) Two appointments available for every service or time slot (he has 2 barbers at the moment)
3) Can we allocate the appointments to the location not the employee?
I'm going to create a "popular" category for Employee1 and display as you said, that should work, thanks :o)
