How can I add a "ADD TO CART" button, and a "QUANTITY SELECT" to cells?

Unfortunately, we don't have a native integration with WooCommerce, so something like this is not possible with the built-in features of the plugin.
You would need to add them with some custom code. The "add to cart" button can probably be added through string-type cells, by simply adding a class to the column, where you'll define the contents as a button, and add the link to the cart with HTML.
Please note that custom work, like this, is not included in the provided support for the plugin, so I can't help you with it.

We've created demo tables to show how wpDataTables can be used. You can use the plugin without advanced knowledge of SQL, CSS, HTML, JS, but for a feature like a button, you do need to know how to define it in CSS if it's not a simple URL link.
You can take a look at the Cryptocurrencies Rank Table tutorial, and it can provide a lot of useful tips. We plan to create tutorials for all our table examples, but with the increased amount of work they were delayed.
