I'd like to get some help/advice on this if possible.
I have two pages for customer panel, a login page and a panel page. I'd like to have the login page redirect to the panel page when the customer is logged in.

That isn't possible to setup in Amelia, unfortunately. The front-end Customer panel is on one page, and it can be redirected to it from the email notifications. You can read everything that you need to know about the setup here. When someone is logged in to WordPress and books an appointment in Amelia that user will be connected to a customer in Amelia for the Panel, so after that when these users are logged in to WP they will be logged in to the panel as well, if that could help somehow.
