I'm not sure I understand what you're asking us. If these two are different plugins, you can deactivate them from the Plugins section in your dashboard, but this is not related to Amelia in any way, so please explain in a bit more detail if it is somehow?

Because of the data protection regulation (GDPR) I don't want a connection to Google Fonts Server in USA. Amelia connects to Google Fonts and Polyfill.io. Can I switch it off? Use local fonts?

You can go to ../wp-content/plugins/ameliabooking/assets/less/frontend/_variables.less and remove these two imports. Then, you should go to the Customize page and simply save it again, and that should do it.
Please note, though, that you will need to do this after every update.
