I can not add services. When I click the employee drop down I see no data. I looked at past support tickets and they suggested there was an undeleted service in the database. There are none that I can see.

another issue is that with employees it seems an employee can ONLY have the Amelia Employee role to be listed. If they are also another role they don’t show up. This means my users with roles assigned for other reasons can’t offer services. I need my users to have multiple roles
Sorry for the late response. We have a lot of tickets coming in, so our response times are longer than usual. Also, our working hours are from 10:00 - 17:00, CET, business days.
We released a new update last night, so I updated Amelia to v2.7. I can now see all your categories in the Services section, and I'm able to add a new service (two employees you've created are there - in the drop-down).
As for the user roles - you can download User Role Editor plugin, and with it, you can add multiple roles to your employees.

there’s a “masquerade” tool in the top bar if you want to see what I see you can log in as me.
I logged in as you and yes all looks good. As me? Not so much.
