I was wondering if there is a way in Amelia appointment booking system where I click on Category/Service/Employee and it bypasses the Calendar view & time view and asks the customer their details and books the appointment.
In short - I don't want the calendar + time to show up. (A short Code I can use if possible.)

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
Your customers need to choose the time and the date - it's not something you can do for them. That's not how the plugin's logic works.

I was wondering if you can assist me on the below, please
I am setting up this appointment system for a doctor.
Now, what happens is that he sees walk in patients as well along with walk-ins he want to take 4 booking in an hour, online via Amelia. Can we setup something like we give one hour slots in the calendar and once 4 different patients have booked in that particular hour that hour time slot become unavailable.
eg. Lets say 4 different patients have booked in the time slot of 10am-11am. This time slot then become unavailable from the calendar. The next available timeslot shown in the calendar would be 11am-12pm.

You can set the Service capacity to be 4, and make sure your Appointment Settings look like this:
This way you will achieve what you described. 4 customers will be able to book the same appointment (at 10), but as soon as the 4th customer books it the time slot will close, and the next available one will be at 11.
