Timezone is incorrect in emails sent to people that book the events and appointments.
I have tried to change WP settings to my timezone "ROME" but this has no effect apart from just shifting a few hours according to the change, but nevertheless, still not reporting the correct timezone
I have tried to create multiple events, all with the same issue
Maybe you could try them here and kindly suggest what I can do to resolve this issue
I can't help you much without taking a look at the back.
Please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party.
You can write credentials here just check Private Reply so nobody can see them except us.

I changed that to Europe/Rome, but then the email came with the time difference of 2 hours (in the past this time), so for an appointment at 3, the email received said it's for 1.
You need to mess with this plugin's settings to get it to work correctly, but that's the culprit right there.

This seemed to have happened after changing time zone in word press, but I am just guessing at this of course

I wanted to let you know that deleting the timezone in events calendar pro resolved the issue for Amelia timezone conflict.
Also, the categories are working as you mentioned.
