I've been trying to find a way to sort employees by name (descending) in the front-end of the plugin. Is there a way to change the current sorting method?

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
At the moment, the only sorting fashion is ascending, and there's no way to change that.

Since there is an option to sort by name (descending and ascending) in the back-end of the plugin, I thought I can repeat this for the front-end. I tried to find the file that is responsible for the front-end sorting but couldn't find it. Can you tell me where to look for it so I can try to edit it by myself?

You can take a look at ../wp-content/plugins/ameliabooking/src/Infrastructure/Repository/User/ProviderRepository.php:
I believe you could change it in the ORDER BY statement.
