Do you have another event for May 31st that a customer might have accidentally booked?
If it was the same date and a different time (but a full-hour difference), I would've thought there is an issue with the time zones, but this is simply not possible. The data is being pulled for the event from the database, and a 9AM event cannot possibly be saved as a 18:55 event.
Please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party.

I modified the Evento Reservado email notification, to include all placeholders, added one of my emails as an attendee, and it came through normally:
However, I can see what the issue initially was.
You clicked on "Send Test email", so the email you received was actually the current date and time - the time when you clicked on "Send Test email". The test email cannot pull the data from an existing event, so this is probably what had you confused.
I just verified this by doing the same thing:
If you add one of your other email addresses as an attendee, you will see the notification works normally.
I removed the placeholders from the notification template, so please add them again before testing it again.
I have an event for june 8 but when people register they get wrong dates using placeholders in email
My event: https://share.getcloudapp.com/E0uzG2Qg
Email set in "notifications": https://share.getcloudapp.com/7Kum4BGn
Email clients get: https://share.getcloudapp.com/04uYmGjr
Hello Javier
This really makes no sense.
