1. Service descriptions are only visible with [ameliacatalog] shortcode at the moment, so you would need to change the way your services are displayed on front-end, if you need the services to show the Description.
2. Unfortunately, no. You can only filter per Service, but not category.
3. This can be changed only if you modify the capabilities of the Amelia Employee WP User role. To achieve this, please download the User Role Editor plugin, and un-check this option:
