In Special Days, you can add custom working hours which will override the existing working hours of your employee. There you can assign which service will be available at which time periods.

However, this still can be achieved.
For example, your employee works every day from 09 - 17 on Services 1, 2 and 3. Now you want a special service which will be available only on Friday between 11 and 12.
So, you go to your employee's working hours, and instead of 09 - 17 on Friday, you add this:
09 - 11 - Employee works on Services 1, 2 and 3
11 - 12 - Employee works on Services 1, 2, 3 and Special Service
(OR 11 - 12 - Employee works only on Special Service)
12 - 17 - Employee works on Services 1, 2 and 3.
This would apply to every Friday, but if you need special days, you can do it in the same manner, but only for the given date.
So this could be a problem. If all employees are on service specific working hours, this could lead to the situation, that no bookings for a new service are possible.
So imho there should be an option to select employee and timeslot in the settings.

thanks for your reply. But this solution does not help.
I do not want to limit the working hours of the employee, I want to limit the appointment.
e.g. a special service is only offered Fridays between 11 and 12 .
The employee works the whole day ;-)
As a workaround I use a "dummy employee" but that is only practicable, if you have very few special offers.
Please add this feature to your roadmap. Imho the option to limit services this way is very important.
