Feature Request:
Our classes run roughly 6 hours and I'd like to change the end time to be about 7pm instead of at 7pm.
Could this be added in the future?

If I understood you correctly, you want to add a non-fixed 6 hours working hours, correct?
I don't believe that will be achievable any time soon, since that's not how Amelia works, but I will definitely forward it to our development team.
