Something like this is possible with custom CSS, you can hide this employee select, and your customers will not be able to see it. Employee will be selected randomly, at the moment there is no some specific rule that you can set to choose which employee will be selected (with less appointments, with higher service price...).

You can send me your booking page, and I will provide  you custom CSS, that you need to add to your website, to achieve this.

You can simply hide the employees selection and a random employee will be chosen every time. Here's the CSS you can use:

display: none !important;
}
