I'm only seeing Calendar style on my setup. Where do I change this view setting?

Unfortunately in the Free version not all the booking forms are available.
So catalog display is available in the full version only.

Since you have purchased the plugin, you can submit tickets in Amelia category with your purchase code.
You can add categories to the page with Catalog view, we have short-code for it:
