I am trying to create two separate services with different booking dates/times for one employee. I created two separate special days/times for that employee with the assigned service designated. But one of the services will not show the date/time as available. I tried creating a second employee and assigning the date/time to them and the booking shows up. Not sure why I can't get the one employee to show more than one service/special day and time as available.
As far as I can see, everything is set up correctly, so if you want to use only one employee, you should assign him/her to the service, and then create a special day, where the employee will work only on that service. Similar to what you already did for May 7th and May 10th, but only with one employee.
I didn't want to create any fake services, to avoid causing a confusion with your customers, but if you can do that, and let me know I'll gladly check to see if there are any issues.

Hello Jeanne
