I have a question. I tried to use placeholder provided in latest wpdatatables plugin and it works but only for one-line as editor input type.
is it possible to display user full name as placeholder when I choose selectbox as editor input type?

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
It is using different logic than one-line edit, so it can't be implemented.

I tried to put predefined values using custom jquery but when I click add it says the field cannot be empty.

There are no workarounds for this, unfortunately.
You may be able to develop some custom solution, but we never did that (if we did, it would've been included in the plugin).
Also, custom solutions are not included in the provided support for the plugin, so I can't help you with that.
