Hello, how can I pass the value of a custom field to the short_code of the wpdatatables?

I'm sorry, but I don't understand what you mean by "custom field".
You can pass the the variable values in the shortcode like this:
[wpdatatable id=12 var1=150 var2=350]
However, the variable first needs to be set in the Placeholders tab, and linked to an actual column.
