Request failed with status code 500 under the add new employee option. I have not had this software long it started doing this after adding one employee, I deleted the employee thinking maybe that was the problem but the error pops up without any employees...

Could you please tell me do you have Zoom integration enabled in Amelia? If yes, that error is coming from there. One of our users had this issue recently, and we discovered it is coming from Zoom because they had some issues in the past few days with the access token and API credentials. You probably created this in Zoom after the issue came up. This user said that the issue was resolved when they created a new Zoom user account, so maybe you can try that one as well.
You can check if the issue is coming from Zoom when you open the employees section in Amelia and click on the Network tab in the browser's error log, and then click on the last admin-ajax call from Amelia. It was like this in their case
