If I have an annual subscription and install Amelia Booking on a client's website, will the booking system on the client's website only be working while I pay the subscription?

No, the plugin remains full functional, the website just won't receive updates when the subscription expires and you will not have support anymore.

Depends on the license, if you gat basic license it means for one purchase code that you can place on one website, if you get Pro license you get purchase code with lifetime update and support for 3 websites and if you get Developer licnese it is for unlimited websites and support of unlimited websites at the time.
