The available time slots are set by setting up the employees' work hours. So, for your use case, you need to have the work hours set for all days in the week from 01 to 06 and on Tuesday you set the work hours from 8 to 15h (if I understood your work hours correctly).
When you open the Work Hours tab, you can change the work hours by clicking on the 'pencil' icon for each day, and you can add a new work time period by clicking on the + sign next to Apply to all days. Please look at the attachment.

Just create two Special days - one of them to be the dates from 1st October until 31st with the work hours 8-18 and the other one to be for dates from 1st June till 30th September with the work hours 8-15.
