Greetings, I'd like to change the view of the booking form and have it show the services by categorizes first and then allow the customer to select the service linked to the category is this possible anyway? Currently it shows all services and I feel this is a little clustered

There is a Catalog view ([ameliacatalog] shortcode) where customers will need to choose a category first and then a service from that category. You can read more about it here and see how it looks like on our demo sites following this link. There isn't a possibility to add the categories as an option in the Booking view ([ameliabooking] shortcode).
