Does the service have any buffer time? Do you have an employee assigned to the service? Do working hour of the employee cover the service duration?
Also, if you're booking an appointment from back-end, you need to select a customer, a service, and an employee to be able to select the date. Please check all this, and if you still can't get it to work, please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party. You can write credentials here just check Private Reply so nobody can see them except us.
I really need to take a look, as there are quite a lot of variables here that can cause this behavior - from simple setup mistakes to bugs in the plugin.
Please make sure to enable the PRIVATE response when you paste the credentials in your response.

I can't edit date for an appointment (all dates seem unavailable).
Services have 1h duration.
Default time slot step = 1h
Use service duration for booking a time slot = on.

The service has no buffer, I do have an employee assigned to the service and the employee working hours cover the appointment.
The client booked an appointment and recently asked me to change date and time., so i'm trying to edit on backend.
Let me know if this info is enough of if you still need a login credentials.
